Tuna, Rice and Peas

We’ve all been caught out and arrived home late with nothing to prepare for dinner. This is a great go to meal for when you have no time and the fridge is bare. It’s super quick, super tasty and super filling and best of all, it’s super healthy. Great for school lunchboxes.

Wholegrains for a healthy digestive system

Brown rice is considered a wholegrain since it hasn’t lost its wholeness through processing. It’s high in fibre, which can help maintain a healthy colon and aids digestion. Brown rice is also high in manganese, which helps our body synthesise fats and benefits the nervous and reproductive systems. Tuna is high in protein, important for building those growing muscles.

INGREDIENTS

1 cup cooked brown rice
1 80g tin of tuna in olive oil drained
1/3 cup frozen peas
1 tsp. tamari or soy sauce

METHOD

Place boiling water over the peas and leave for 2 minutes. Then drain.
Place all ingredients into a bowl and mix together.

Serves 2
