Purple Chicken Soup
It’s been very cold here in Sydney for the past few weeks, so why not warm up their little bellies with a comforting nutritious soup? This soup recipe is a great way to introduce cabbage into your kids’ diets, and they will love how the chicken and broth both turn purple. It’s packed full of protein and vegetables – just perfect for lunch or dinner!
Protein-packed and yummy
Chicken is high in protein. Protein is responsible for many functions within our bodies, including muscle development, correct fluid balance and the transportation of vitamins and minerals throughout the body. As an added bonus, the vegetables in this dish provide your kids’ bodies with the nutrients they need to grow strong and stay healthy.
Purple Chicken soup
Ingredients:
- 1 bunch shallots diced
- 1 kg chicken breast cubed
- 2 carrots diced
- 3 celery stalks diced
- 1/2 purple cabbage shredded finely
- 2 bay leaves
- 2 litres of homemade chicken broth or 2 tbsp. vegetable stock paste.
- 2 tbsp. olive oil
Method:
- Place all ingredients in a pot minus the chia seeds.
- Bring to the boil until desired texture of berries is achieved.
- Add chia seeds.
- Store in airtight container in the fridge.
