Chicken and Vegetable Fritters

These little beauties are the perfect lunchbox addition. They offer a serve of vegetables, which most lunchboxes are missing and the chicken is high in protein, great for filling hungry tummies.

Protein and vegetables to keep them healthy

Chicken is an excellent source of protein for adults and kids. Protein is responsible for many functions within our bodies including muscle development, correct fluid balance and the transportation of vitamins and minerals throughout the body. Added to the protein content of these fritters are the vegetables, which provide our bodies with many nutrients that we need to grow strong and stay healthy.

Ingredients:

500grams chicken mince
1/2 brown onion diced
1 zucchini grated
1 carrot grated
1 corn cob
1 egg
½ cup wholemeal spelt flour
Olive oil for cooking

Method:

Place all the ingredients into a mixing bowl and combine.
Heat a large frying pan on medium heat.
Add 2 tbsp. olive oil.
Place a big spoonful of the mixture into the frying pan and flatten out to 1cm thickness.
Cook for 3 minutes each side or until golden brown.
Add more oil when necessary.
