Almond and Goji Berry Granola
A visit to the supermarket can leave you wondering if the cereal you have chosen is in fact ‘healthy’. Many breakfast cereals claim that they contain wholegrains, and therefore are high in fibre and calcium.
Unfortunately most shop bought cereals are also high in sugar, artificial flavours, colours and preservatives. You can avoid all this by making your own cereal at home. When you make your own granola you control exactly what goes in it and you’ll save money as well. Our Almond and Goji Berry Granola tastes great topped with Greek yoghurt and berry chia jam.
Keep them going all morning
This recipe will give your children the sustained energy they need to concentrate at school and keep going until their morning snack. It’s packed full of protein while being low in sugar.
The cinnamon helps regulate blood sugar levels and can also boost brain activity while sunflower seeds are high in Vitamin E, which is linked to healthy cardiovascular function. Pumpkin seeds are packed with magnesium and zinc, which are essential for a healthy metabolism and good digestive health.
5 cups rolled oats
1 cup pumpkin seeds
1 cup sesame seeds
1 ½ cups almonds
4 tbsp. coconut oil
3 tbsp. maple syrup
2 tsp. cinnamon
1 cup goji berries
Preheat the oven to 180 degrees.
Line a large baking tray with baking paper.
Combine the oats, nuts, seeds and cinnamon in a large mixing bowl.
Melt the oil and maple syrup in a saucepan over medium heat.
Add the oil and maple syrup to the mixing bowl and combine well.
Spread the mixture evenly in the baking tray.
Cook for 20 minutes, or until golden brown.
Store in a large airtight container.
